It's 3 September 1938, the opening day of the hunting season. For practitioners, of course, it's one of the most eagerly awaited highlights of the year. For gourmets, it's the promise of magnificent end-of-year feasts, the apotheosis of the gourmet calendar.
A sporting passion for some, an essential social occasion for others, hunting has nothing in common with the survival activity of our distant Cro-Magnon ancestors. Today, we hunt for pleasure, to maintain a tradition, to get together with friends or to maintain relationships.
Whatever the reason, this activity is strictly regulated, both by law and by social codes. So let's take a look back at the 1938 season and savour a menu of game recipes taken from the best books of the time. All presented by our historian Pierre Leclercq and concocted by our chef Alain Curdenaire.
